Step 1
Preheat the oven to 200°C. Unroll the pie crust and press it into a pie plate. Pierce it a few times using a fork.
Step 2
Once the oven has preheated, cook the crust for 5 minutes.
Step 3
In a bowl, whisk together the eggs, milk, heavy cream, salt and pepper.
Step 4
Add the ratatouille and mix.

Take the dough out of the oven, pour the egg mixture over the top*. *Check out our tips for this step

Add the mozzarella and herbs on top.
Step 7
Bake at 200°C for 45 minutes, or until the crust is golden brown.
Step 8
Serve with a green salad and it's ready to eat!
For a truly flavoursome dish, we suggest adding chorizo slices, tuna or feta cheese to the quiche filling.
