Step 1

Dans une casserole d'eau bouillante salée, faites cuire le riz selon les instructions du paquet. En fin de cuisson, égouttez-le.

Faites chauffer un filet d'huile d'olive dans une poêle, sur feu moyen. Ajoutez l'ail râpé et le curry. Faites-les revenir 1 minute, en mélangeant.

Step 3

Ajoutez les tomates concassées, les pois chiches, les épinards et un filet d'eau. Salez et poivrez. Couvrez et laissez mijoter 8 à 10 minutes.

En fin de cuisson, mélangez le tout, puis ajoutez le beurre de cacahuètes et le lait de coco. Mélangez bien et poursuivez la cuisson 1 à 2 minutes supplémentaires.
