Bell pepper (assorted)

Step 1

Deseed the peppers and cut into thin slices.

Tomato

Step 2

Wash and chop the tomatoes.

Yellow onion

Step 3

Peel and slice the onions.

Garlic

Step 4

Peel and mince the garlic.

Step 5

Heat a drizzle of olive oil in a pan. Add the garlic and onions and sautee for 2-3 minutes.

Step 6

Add the tomatoes and peppers to the pan. Mix, then add a teaspoon of cumin per person (optional). Cover and leave to simmer for 20 minutes, stirring occasionally.

Egg

Step 7

Lower the heat and create some space for the eggs in the pan. Break the eggs into the pan (count 1 egg /person or 2 for hungry tummies), then season to taste. Leave to cook for 5-6 minutes, or until the eggs are cooked.

Step 8

Serve with coriander, if you have some. Enjoy !
