Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & set aside.


Step 2
Meanwhile, heat a drizzle of olive oil in a pan over medium heat. Add the chicken & season with salt, pepper & the spice mix. Cook, undisturbed, for 4-5 min on each side.

Step 3
Meanwhile, cut the avocado in half. Discard the skin & the pit. Cut into cubes.
Step 4
Cut the chicken into strips.



Step 5
Serve the rice on a plate with the chicken, drained corn & kidney beans & avocado. Re-season to taste & top with coriander leaves, if you have some*. Enjoy! *Check out our tips for this step
