Step 1
Separate the yolks from the whites in 2 separate bowls.
Step 2
Add the sugar to the yolks. Whisk until the mixture starts to thicken. Optional: add vanilla extract

Add the mascarpone to the sugar/yolk mixture and mix again.
Step 4
Optional: Add the amaretto (you can also add the amaretto to the coffee instead of the cream, up to you!)

Add a pinch of salt to the egg whites and mix until peaks form.
Step 6
In a large bowl, add the egg yolk/mascarpone mixture. Slowly incorporate the whites using a spatula, gently folding to mix.
Step 7
Pour the coffee in a bowl and quickly dip the lady fingers on each side. Layer the lady fingers in a casserole dish (or a trifle bowl if you have one!). Tip: You can also make the tiramisu in individual ramekins or bowls.
Step 8
Pour half the mascarpone mousse, spread it out using a spatula, add a second layer of lady fingers (dipped in coffee) and then add another layer of mousse.
Step 9
Cover the tiramisu with plastic wrap and chill in the refrigerator for at least 3 hours. Tip: The best is to leave it in the fridge overnight.
Step 10
Remove the tiramisu just before serving and dust with cocoa powder. Enjoy!
