Red kuri squash (potimarron)

Step 1

Épluchez puis coupez le potimarron en deux et videz-le. Coupez-le petits cubes.

Épluchez puis émincez finement les échalotes.

Dans le bol du Thermomix, ajoutez un filet d'huile d'olive et les échalotes. Faites revenir le tout 3 minutes / 120°C / vitesse 1.

Ajoutez ensuite le potimarron. Salez, poivrez et faites revenir 6 minutes / 120°C / sens inverse/ vitesse 1.

Vegetable bouillon (cube)
White wine

Step 5

Ajoutez 150 ml d'eau chaude par personne et le bouillon cube. Poursuivez la cuisson 10 minutes/ 100°C/ sens inverse/ vitesse 1.

Arborio rice

Au bout de 10 minutes, ajoutez le riz et le vin blanc dans le bol du Thermomix. Faites cuire 13 minutes/ 100°C/ sens inverse/ vitesse 1

Pendant ce temps, faites dorer les noisettes 3 minutes à feu vif dans une poêle puis concassez-les.

Parmesan (grated)

Step 8

Une fois le riz cuit, salez, poivrez, ajoutez le parmesan et mélangez 30 secondes / sens inverse / vitesse 1.

Step 9

Servez le risotto dans une assiette creuse avec les noisettes concassées par-dessus. Re-assaisonnez selon vos goûts. C'est prêt !
