Step 1

Wash the vegetables, cut the carrots and leeks into rings, and the mushrooms into thin slices.

Step 2

Heat the butter or olive oil in a large pot. Cook the vegetables for 3 minutes before adding the shrimp.

Add the cream (or coconut milk), 1/2 a cup of water per person, and the veal stock. Season and mix. Cover and simmer for 15 minutes.
