Garlic

Step 1

Halve the eggplant lengthwise and slice it into half-moons. Peel and finely mince the garlic.

Heat a drizzle of olive oil in a pan over medium-high heat. Add the eggplant and fry until golden brown.

Pasta (rigatoni)

Step 3

Cook the pasta in a pot of salted boiling water according to the package instructions.

When the eggplant is halfway done, add the garlic.

Tomato sauce

Step 5

When the eggplant is done, add the tomatoes and cook, stirring, for 2 minutes. Season with salt to taste.

Step 6

Mix the pasta together with the sauce.

Step 7

Serve, topped with ricotta and some fresh basil leaves (optional). It's ready!
