Step 1

In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & set aside.

Taco seasoning

Step 2

Heat a drizzle of olive oil in a pan over medium heat. Add the chicken & season with salt, pepper & the spice mix. Cook, undisturbed for 4-5 min on each side.

Kidney beans (canned)
Avocado
Cilantro (fresh)

Step 3
