Stovetop, Pot (small), Colander, Frying pan
Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & set aside.
Step 2
Meanwhile, heat a drizzle of olive oil in a pan, over medium heat. Add the chicken & season with salt, pepper & the spice mix. Cook, undisturbed for 4-5 min on each side.
Step 3
Once cooked through, drain the rice.
Step 4
Serve the chicken on a bed of fluffy rice. Add the drained corn, beans & diced avocado. Top with the coriander leaves & re-season to taste.* Enjoy ! *Check out our tips for this step
