Step 1
Melt the butter in a saucepan or in the microwave.
Step 2
In a bowl, crush the speculoos using a glass to reduce them to crumbs.
Step 3
In a bowl, add the speculoos crumbles, the oat flakes and the melted butter. Mix until you obtain a homogeneous preparation.
Step 4
Take the zest of a lemon. Reserve.
Step 5
Squeeze the lemon juice then add it to a bowl with the cream cheese. Add the sugar then mix well.
Step 6
In a salad bowl, add the liquid cream (very cold) then beat it into whipped cream for about 5 minutes.
Step 7
Add the cream cheese/lemon/sugar mixture then beat again to obtain a creamy consistency.
Step 8
In ramekins or glasses, add a first layer of the speculoos/oat mixture (the equivalent of 2 tablespoons) then finish with the cream and add the lemon zest on top. Enjoy straight away or keep refrigerated for up to 2 days. It's ready !
