Step 1
Preheat the oven to 210°C. Peel & slice the onions into thin strips.
Step 2
Heat a drizzle of olive oil in a pan, over medium heat. Add the onions. Season with salt, pepper & 'herbes de Provence'. Add the capers & stir. Leave to simmer for 20-25 min, stirring occasionally, until the onions are lightly caramelised & golden.
Step 3
Add a tablespoon of sugar & mix to combine. Continue cooking for another 4-5 min.
Step 4
Roll the pizza dough out onto a baking sheet. Top with the caramelised onions.
Step 5
Top the pissaladière with the drained anchovies & black olives. Bake for 15 min at 210°C.
Step 6
Once golden brown, remove the pissaladière form the oven & serve warm or cold with a side of green salad. Enjoy !
