Step 1
Préchauffez le four à 200°C. Lavez puis piquez les patates douces à l'aide d'une fourchette.

Disposez les patates douces sur une plaque recouverte de papier cuisson et enfournez-les 45 à 50 minutes à 200°C, en les retournant à mi-cuisson.

Pendant ce temps, préparez la garniture. Dans un bol, mélangez : les haricots rouges, le maïs, le paprika et le persil haché, si vous en avez. Salez, poivrez et ajoutez une cuillère à café d'huile d'olive par personne.
Step 4
Une fois les patates douces cuites et bien fondantes, sortez-les du four.


Step 5
Servez la salade dans une assiette et ajoutez la patate douce sur le dessus. Coupez-la en deux dans le sens de la longueur. Ajoutez la garniture et le guacamole par-dessus puis re-assaisonnez selon vos goûts. C'est prêt !
