Step 1
Heat a frying pan on medium heat and add a drizzle of olive oil. Cook the tortillas for 1 minute on each side, until lightly golden.

Crack the eggs into the same pan and cook for 4 minutes.

Step 4
To plate, layer the tortillas, eggs, drained kidney beans and slices of avocado. Top with hot sauce.
