Step 1

Wash and peel the carrots. Cut them into round slices.

Add the carrots to a pot with 3/4 cup of water per person and bring to a boil. Reduce to a simmer, season with salt & pepper and cook for 15-20 minutes, until the carrots are tender.

Coconut milk

Step 3

Once the carrots are cooked, add the coconut milk and mix with an immersion blender (or regular blender). Cook for a few more minutes. If too thick, add some water. Enjoy!
