Stovetop, Frying pan, Pot (small), Colander
Step 1
Peel, then mince the garlic.
Step 2
Wash, the slice the eggplant into half rounds.
Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the eggplant. Season with salt & pepper & sauté for 10 min.
Step 4
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, reserve a small ladle of cooking water before draining the pasta.
Step 5
After 10 min, add the minced garlic to the pan with the eggplant. Continue cooking for 10 min.
Step 6
When the eggplant is cooked through, add the tomatoes & cook for 2-3 min while stirring. Season with salt & pepper.
Step 7
Add the drained pasta to the pan with the eggplant & tomato sauce. Mix until the pasta are well coated.
Step 8
Serve the pasta alla Norma & top with ricotta & fresh basil, if you have some. Re-season to taste & enjoy !
