A quick & easy tagine - a great recipe to have in your repertoire !
Make sure you have...
Stovetop, Pot (small), Frying pan
Step 1
Peel & slice the onions into thin strips.
Step 2
Heat a drizzle of olive oil in a pan, over medium-high heat. Add the ground cumin, ginger & the sliced onions & sauté for 2-3 min, stirring.
Step 3
Add the chicken thighs & cook for 6-7 min, until lightly golden.
Step 4
Meanwhile, prepare the chicken stock. Dissolve the stock cube in 100ml of hot water per serving.
Step 5
Add the chicken stock & lemon juice to the pan. Stir, cover & leave to simmer for 20 min, over low heat.
Step 6
Towards the end of cooking, prepare the couscous. In a bowl, combine : the couscous, salt, pepper & a drizzle of olive oil. Pour the same volume of couscous in boiling water. Cover & leave to soak for 5 min. Fluff the couscous with a fork. Set aside & keep warm.
Step 7
Meanwhile, add the green olives to the pan with the chicken. Stir & continue cooking for another 2-3 min.
Step 8
Serve the couscous with the lemon & olive chicken.* Re-season to taste & enjoy ! *Check out our tips for this step
