Utensils

Stovetop, Blender, Pot (small), Frying pan

Shallot

Step 1

Peel and chop the shallots.

Parsnip

Step 2

Wash and peel the parsnips and cut them into slices.

Step 3

Heat a drizzle of olive oil in a pot and add the shallots. Cook for 1-2 minutes.

Step 4

Add the parsnip to the pot and cook for 2 minutes on high heat.

Vegetable bouillon (cube)

Step 5

Add 1 cup of water per person and the bouillon cube. Season with salt & pepper and mix. Cover and cook for 20 minutes on medium heat.

Heavy cream

Step 6

Once the parsnips are tender add the cream and mix using an immersion blender.

Step 7

Add some more water if the soup is too thick.

Hazelnuts

Step 8

Serve in bowls with some chopped hazelnuts on top. Enjoy!
