Step 1
Faites cuire les œufs pendant 6 minutes dans une casserole d'eau bouillante. Une fois cuits, plongez-les dans de l'eau froide pour stopper la cuisson. Enlevez la coquille délicatement et réservez-les.

Pendant ce temps, réchauffez la ratatouille selon les instructions du paquet.

En parallèle, réchauffez le quinoa selon les instructions du paquet.


Step 4
Préparez la vinaigrette. Dans un bol, mélangez : la moutarde à l'ancienne, le vinaigre de cidre et une cuillère à soupe d'huile d'olive par personne. Salez et poivrez.


Step 5
Servez le quinoa dans un bol ou une assiette creuse avec la ratatouille, la roquette et l'œuf mollet coupé en deux. Versez la vinaigrette par-dessus, parsemez de persil ciselé, si vous en avez. Re-assaisonnez selon vos goûts, c'est prêt !
