Step 1
If needed, defrost your cod. Cook the cod in a frying pan with a drizzle of olive oil on high heat, for 2 minutes on each side. Season with salt and pepper at the end of the cooking. Once cooked, set to one side.
Step 2
Remove the mango flesh by slicing it off along the pit. Using a knife, score a cross-hatch pattern into the mango flesh and turn the skin inside out. Remove the cubes with the knife blade.
Step 3
Peel and thinly slice the onions.
Step 4
Save half the lemons for later. Cut off the ends, then remove the skin down to the flesh. Slice along the membranes to remove the supremes.
Step 5
Add the cod (broken into pieces) to the tortillas, a bit of mango, some onions, lemon segments, some cilantro, lemon juice and zest, salt and pepper and a bit of olive oil. Serve and enjoy!
