Broccoli (fresh)

Step 1

Wash & cut the broccoli into florets. Slice the larger florets in half & the stem into small cubes.

Step 2

Add a drizzle of olive oil, the minced or grated garlic and the broccoli to a pot and sauté for 2 minutes over medium-high heat.

Step 3

Add water to cover (about 1 cup per portion), season with salt and pepper. Bring to a boil, cover and let simmer over medium heat for 10 minutes.

Cream cheese

Step 4

After 10 minutes, spoon out and reserve a ladleful of the cooking water. Add the cream cheese to the pot and puree with an immersion blender or blender until smooth.

Step 5

If the soup is too thick, add a little of the reserved cooking water to adjust the consistency.

Step 6

Serve in bowls, with another teaspoon of cream cheese on top (optional).
