Stovetop, Blender, Pot (small)

Yellow onion

Step 1

Peel & finely mince the onions.

Zucchini

Step 2

Wash & dice the zucchini.

Garlic

Step 3

Heat a drizzle of olive oil in a pot, over medium heat. Add the onions & grated garlic. Sauté for 2-3 min.

Step 4

Add the zucchini & sauté for 5-6 min, stirring, until lightly browned.

Vegetable bouillon (cube)

Step 5

Add 125ml of water per serving & the stock cube. Stir, cover & leave to simmer for 10-15 min, over medium heat.

Kiri spreadable cream cheese

Step 6

Once the zucchini is cooked & tender, add the kiri cheese. Blend until smooth. If needed, add water & blend.

Step 7

Serve the zucchini soup with cream cheese in a bowl. Re-season to taste & enjoy !
