Step 1

Peel and mince the shallots. Slice the zucchini in rounds.

Arborio rice

Step 2

Add a bit of olive oil, shallots, rice to the Cookeo bowl. Set to browning mode. Cook for 3 minutes, stirring occasionally.

Add the zucchini, water, stock, wine, salt & pepper, and set the pressure cooker to 15 minutes

Parmesan (grated)

Step 4

When the cooking time is up, add parmesan and mix.

Step 5

Plate up the risotto, adding a bit of lemon zest on top for an extra kick. You can also add some pine nuts or shaved almonds if you have any.
