Greek Yogurt (plain)
Curry powder
Lemon

Step 1

Preheat the oven to 200°C. In a large bowl, combine : the yogurt, curry powder & lemon juice. Season with salt, pepper & spices to taste (cumin, garlic powder & paprika). Add a generous drizzle of olive oil & stir.

Chicken breast

Step 2

Toss the chicken in the marinade to coat well. Cover the bowl & refrigerate for a minimum of 15 min.

Cauliflower (fresh)

Step 3

Meanwhile, wash & slice the cauliflower into bite-sized florets.

Step 4

Add the cauliflower on a sheet tray lined with parchment paper. Season with a drizzle of olive oil, salt & pepper. Toss well to evenly coat.

Step 5

Arrange the marinated chicken on the sheet tray & roast in the oven for 30 min at 200°C.

White rice (long grain, cooked)

Step 6

Meanwhile, prepare the rice according to package instructions.

Step 7

Remove the dish from the oven & serve the chicken with its side of roasted cauliflower & rice. Season to taste & enjoy !
