Stovetop, Pot (small)

Sweet potato

Step 1

Peel & dice the sweet potatoes.

Step 2

Heat a drizzle of olive oil in a pot, over medium-high heat. Add the sweet potatoes & sauté for 3-4 min.

Yellow onion

Step 3

Meanwhile, peel & finely mince the onions. Add them to the pot & cook for another 2-3 min, stirring.

Wheat berries
Vegetable bouillon (cube)

Step 4

Add the grains, 125ml of water per serving & the stock cube. Stir & bring to boil. Cover & leave to simmer for 15 min, over low heat, stirring occasionally.

Lemon
Spinach (fresh)

Step 5

Once cooked through, season to taste. Add the lemon juice & spinach leaves. Stir & cook for another 1-2 min, until the spinach is wilted.

Goat cheese

Step 6

Serve the Winter pot in a bowl topped with crumbled goat's cheese. Re-season to taste & enjoy !
