Make sure you have...
Stovetop, Pot (small), Frying pan
Step 1
In a pot of boiling water water, cook the noodles according to package instructions. Once cooked through, drain the noodles.
Step 2
Meanwhile, wash & slice the mushrooms.
Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the mushrooms, green beans & grated garlic. Stir then add a drizzle of water to the pan. Cover & leave to cook for 10-12 min.
Step 4
Meanwhile, crack the eggs in a bowl. Season with salt & pepper & whisk them.
Step 5
Move the veggies to one side of the pan. Add a drizzle of olive oil & pour the scrambled eggs into the pan. Cook for 1 min before breaking the eggs up with a spatula. Combine the eggs with the veggies.
Step 6
Add the noodles & soy sauce. Mix to combine & cooks for another 1-2 min, over high heat.
Step 7
Serve the veggies stir fried noodles in a bowl topped with fresh cilantro. Re-season to taste & enjoy !
