Step 1
Peel the potatoes and cut them into cubes.
Step 2
Dans une casserole d’eau froide, ajoutez les pommes de terre. Portez à ébullition, puis faites-les cuire pendant 15 minutes à feu moyen.
Step 3
Meanwhile, wash then cut the mushrooms into slices.
Step 4
Heat a pan with a drizzle of olive oil then cook the turkey escalope for 3 minutes on each side. Season with salt and pepper then set aside.
Step 5
In the same pan, add the mushrooms. Add salt and pepper and brown them for 5 minutes over high heat.
Step 6
Check the potatoes for cooking, then drain them. Using a fork or potato masher, mash the potatoes. Add the milk in several batches, while mixing. Then add the butter, salt and pepper, then mix again. Keep warm.
Step 7
Once the mushrooms are cooked, add the cream and mustard, then mix. Then add the escalope, cover and cook for an additional 2 minutes over medium heat.
Step 8
On a plate, add the puree and the escalope to the mushroom cream. Season to taste and add a few sprigs of parsley, if you have any. It's ready !
