Step 1
Preheat the oven to 180°C. Cut the ends of the leek*, leaving only the white part, then slice it finely. Place it in a colander and rinse thoroughly to remove impurities. *Check pout our tips for this step
Step 2
Wash the potatoes, then cut them into small pieces.
Step 3
Prepare the broth by diluting it in 100 ml of hot water.
Step 4
On a baking sheet or in a baking dish, add the turkey leg. Brush it with olive oil and oregano. Pour in half of the broth, then bake for 20 minutes at 200°C.
Step 5
Meanwhile, prepare the yogurt sauce. In a bowl, mix: the yogurt, lemon zest and juice, a drizzle of olive oil, salt and pepper.
Step 6
After 20 minutes, remove the tray from the oven and add the potatoes and sliced leeks. Drizzle them with olive oil, salt, pepper and oregano. Pour in the rest of the broth and bake again for 30 minutes at 200°C (count approx half an hour per 500g of turkey).
Step 7
Once the turkey leg and vegetables are cooked, remove them from the oven and serve with the yogurt sauce. It's ready !
For a zero-waste dish, use the discarded leek stalks to make soup ! Rinse well & remove all damaged, dry & yellow parts before adding to your pot with the ingredients of your choosing.
