Step 1

Wash and peel the carrots, and cut them on an angle into thin rounds (about 1/4 inch thick).

Step 2

Put the carrots and peas into a frying pan with a drizzle of olive oil and cook for 2 minutes on medium heat.

Then, add the chopped garlic and cook for another 3 minutes.

Curry paste (red)
Vegetable bouillon (cube)

Step 4

Add half a cup of water per person to the frying pan, and the curry paste, and mix. Add the bouillon cube, mix together, and bring to a boil. Cook it until about half of the water has evaporated.

Precooked noodles (ramen)

Step 5

Now, add the noodles. Be sure to separate them with your fingers before adding them into the pan with the vegetables. Cook for 3 minutes.

Step 6

Take the noodles and veggies out of the pan.

Add a drizzle of olive oil in the pan and fry the eggs for 2 or 3 minutes (depending on how you like them.)

Serve with the egg on top of the noodles and veggies. (Option: Add fresh herbs.) Salt and pepper to taste, and enjoy!
