A juicy steak, crunchy potato wedges & a Caprese salad drizzled in pesto - what more could you ask for !
Make sure you have...
Oven, Stovetop, Frying pan
Step 1
Preheat the oven to 200°C. Clean the potatoes & slice into wedges.
Step 2
On a sheet tray lined with parchment paper, add the potatoes & a generous drizzle of olive oil. Season with salt, pepper and oregano. Toss to evenly coat. Roast for 30 min at 200°C.
Step 3
Meanwhile, wash & slice the tomatoes into thin rounds.
Step 4
Slice the mozzarella into thin rounds. Add the tomato & mozzarella slices to a plate.
Step 5
Heat a drizzle of oil in a pan over medium-high heat. Pat the steak dry with a paper towel. Season all over with salt & pepper. Sear the steak for 2 min on each side for rare doneness.
Step 6
Transfer the steak to a cutting board & slice if desired.
Step 7
Remove the potatoes from the oven. Serve with the Caprese salad & steak. Top with a drizzle of pesto & season with salt & pepper to taste. Garnish with fresh basil leaves if you have some. Enjoy!
