Garlic

Step 1

Peel & slice garlic.

Pasta (penne)

Step 2

In a pot of salted boiling water, cook the pasta according to the package instructions. Reserve a ladle of pasta water before straining & set aside.

Chicken breast

Step 3

Heat a drizzle of oil in a pan over medium-high heat. Season chicken breast with salt & pepper. Add the chicken & cook for 5 min on each side, or until chicken is fully cooked through. Transfer to a plate.

Step 4

Add sliced garlic to the pan. If needed, add an additional drizzle of oil. Brown garlic lightly for about 2 min.

Spinach (frozen)

Step 5

Add spinach & season with salt & pepper. Cook until the spinach is heated through, about 2 min.

Cream cheese
Artichoke hearts
Parmesan (grated)

Step 6

Add cream cheese, cooked pasta, drained artichokes, reserved pasta water & parmesan into the pan. Stir to combine & cook for 3 min.

Step 7

Slice the chicken breast, if desired.

Step 8

Serve pasta with sliced chicken on top. Garnish with additional parmesan cheese & enjoy!
