Stovetop, Pot (small), Frying pan
Step 1
If needed, thaw the shrimp. Prepare the spice mix. In a small bowl, combine : the ground cumin, smoked paprika, salt & ground pepper.
Step 2
In a mixing bowl, add the defrosted shrimp & spice mix. Toss well to evenly coat the shrimp. Set aside.
Step 3
Wash & halve the peppers, removing the seeds. Small dice the pepper.
Step 4
Wash & dry the cilantro, then finely chop.
Step 5
Heat a drizzle of oil in a pan, over medium-high heat. Add the peppers. Stir & cook until slightly softened, about 3-4 min. Remove the peppers & set aside.
Step 6
In the same pan, heat another drizzle of oil. Add the seasoned shrimp & sear for 1-2 min on each side.
Step 7
Meanwhile, heat the rice according to package instructions.
Step 8
In a bowl, combine : the heated rice, bell peppers, drained beans, two thirds of the chopped cilantro & lime juice. Season with salt & pepper.
Step 9
Serve the red bean rice with the spicy shrimp*. Garnish with any leftover cilantro & re-season to taste. Enjoy ! *Check out our tips for this step
