Step 1
Wash and peel the potatoes, chopping them into thin slices. Rinse them with cold water.
Step 2
In a pot of salted boiling water, cook the potatoes for 15 min. Once cooked through, drain the potatoes.
Step 3
Peel & finely dice the onions.
Step 4
In a large bowl, crack the eggs & whisk them.
Step 5
Add the potatoes & onions to the bowl.* Season with salt & pepper & mix to combine. *Check out our tips for this step
Step 6
Heat a good drizzle (3 tablespoons) of olive oil in a pan, over medium heat. Pour the egg mixture into the pan & cook for 5-10 min.
Step 7
Flip the tortilla : place a plate on top of the pan & quickly flip-it over. Add the tortilla back into the pan & cook for an extra 5 min. Enjoy !
For a truly flavoursome dish, we suggest adding shredded cheese, bacon bits or chorizo & seasoning your eggs with smoked paprika.
