Step 1

Chop the onion.

Add a drizzle of olive oil to a pan on medium heat. Add the onions and sauté for 3 minutes.

Andouille sausage (smoked)

Add the sausages and brown for 2 minutes on each side.

Tomato sauce
Ras el hanout
Harissa (paste)

Step 4

Add the Ras el hanout, harissa and tomato. Season with salt and 1 cup of water per person. Cook for 5 minutes.

Couscous

Step 5

Boil 1 cup of water per person (add the bouillon cube) or if using liquid stock, boil 1 cup per person. Add the dry couscous to a bowl and season with salt & pepper. Cover the couscous with the liquid, add a cover to the bowl and let cook for 5 minutes.

Step 6

Serve the couscous with the sausages and tomato sauce. Enjoy!
