Step 1
Preheat the oven to 220°C. Cut the base off the Brussels sprouts and then cut them in half.
Step 2
Rinse the Brussels sprouts in a strainer to remove any dirt.
Step 3
Wash the potatoes, peel them (or leave the skin on if you prefer!) and cut into 2-inch cubes.
Step 4
Place the Brussels sprouts and potatoes on a baking sheet covered in parchment paper.
Step 5
Season with salt & pepper, drizzle with olive oil and mix.
Step 6
Add the sausages and bake at 220°C for 15 minutes.
Step 7
Mix the honey and mustard.
Step 8
After 15 minutes, add the honey mustard mixture to the vegetables and sausage and mix, flipping everything for even cooking.
Step 9
Optional: add some chopped or slivered almonds.
Step 10
Continue cooking for 15 more minutes, until the vegetables are nice and golden.
Step 11
Remove from the oven, serve and enjoy!
