Stovetop, Frying pan
Step 1
Peel & mince the ginger.
Step 2
Rinse & thinly slice the scallions (optional).
Step 3
Crack the eggs into a small bowl & whisk.
Step 4
Heat a drizzle of oil in a pan over medium-high heat. Add the shrimp & cook for 2-3 min on one side. Flip & cook 2-3 min on the other side, until pink & fully cooked.
Step 5
In the center of the pan, add ginger, scallions, pre-cooked rice, frozen mixed veggies & soy sauce. Mix it all together. Cook, stirring for 3-4 min.
Step 6
Push the rice mixture to the edges of the pan. Pour the egg in the center & lightly scramble for 1 min.
Step 7
Mix everything together & cook 1-2 min.
Step 8
Serve the fried rice in a bowl & garnish with scallions. Enjoy!
