Step 1
If needed, defrost your salmon. Peel and chop the potatoes into cubes (1 to 2 inches).
Step 2
Boil the potatoes in water for 20 minutes
Step 3
Meanwhile, wash and finely mince the leeks.* *Check out our tips for this step
Step 4
Fry them in a pan with a knob of butter (or olive oil) for 2-3 minutes until they're lightly browned.
Step 5
Add a little water and let it evaporate.
Step 6
Once the water has evaporated, add the strained sweetcorn and the salmon - cook it for 2 minutes on each side, stirring regularly corn and leeks.
Step 7
Remove the potatoes from the microwave, they should be soft. (Put back 2 minutes in the microwave if it is not the case). Mash them using a fork, adding a knob of butter (or olive oil), salt and pepper.
Step 8
Serve the salmon with the mashed potato, leeks and sweetcorn. Season and serve!
