Step 1
Preheat the oven to 180°C. Wash the potatoes and cut them into small chunks.
Step 2
Peel the onion and cut into quarters.
Step 3
Add the onion and potatoes* to a baking dish. Drizzle with olive oil and dried rosemary. Season with salt & pepper and mix well to combine. *Check out our tips for this step
Step 4
Add the chicken drumsticks, coat with olive oil, salt and pepper and mix. Bake for 40 minutes at 180°C.
Step 5
In the meantime, cut the sun-dried tomatoes into small pieces.
Step 6
After 40 minutes, add the sun-dried tomatoes and olives. Mix and bake for another 10 minutes. Remove from the oven and enjoy!
Steam your potatoes before roasting, for more tender veg.
