Yellow onion

Step 1

Peel & small dice the onions.

Step 2

Heat a drizzle of olive oil, in a pot, over medium heat. Add the onions & sauté for 4-5 min, stirring.

Vegetable bouillon (cube)

Step 3

Meanwhile, prepare the veggie stock. Dissolve the stock cube in 250ml of hot water per serving.

Tomatoes (canned, peeled)
Red lentils (dry)
Cumin (ground)
Coriander (ground)

Step 4

Add the peeled tomatoes, lentils, cumin & ground coriander (optional) in the pot with the onions. Stir to combine & cook for 1-2 min.

Step 5

Add the veggie stock & bring to a light boil. Reduce the heat to low, cover & leave to simmer for 15-20 min.

Step 6

Blend the soup in a mixer or using a stick blender. If needed, add more water & blend again until desired consistency.

Step 7

Serve the lentil & cumin soup in a bowl. Re-season to taste & enjoy !
