Make sure you have...
Stovetop, Peeler, Grater, Kitchen towel, Frying pan
Step 1
Wash and peel the potatoes.
Step 2
Peel the onion.
Step 3
Grate the potatoes and the onion.
Step 4
Wrap the grated potatoes and onion in a clean kitchen towel and squeeze out the excess water.
Step 5
Add the grated potato and onion, flour and eggs to a bowl. Add salt and pepper and mix.
Step 6
Heat a drizzle of olive oil in a large frying pan on high heat. Add 2 spoonfuls of the potato mixture. If your pan is large enough, you can make more than one at a time.
Step 7
Flatten the mixture by pressing down with the back of a spoon. Cook for 5-6 minutes before flipping.
Step 8
Flip the pancakes and cook for another 5-6 minutes.
Step 9
The pancakes should be golden brown.
Step 10
Serve with some mixed greens. Enjoy!
