Herby & creamy tortellini soup with savory crumbled sausage is the soup you never knew you needed !
Make sure you have...
Stovetop, Pot (small)
Step 1
Peel & dice the onions.
Step 2
Heat a drizzle of olive oil in pot, over medium heat. Add the ground sausage & break up the meat with a spatula. Cook until slightly browned, about 4-5 min. Use a slotted spoon to transfer the meat to plate, reserving the fat in the pot.
Step 3
In the same pot, add the diced onion. Stir & cook until translucent, about 2-3 min. Add a splash of water to deglaze the pan then stir again.
Step 4
Add the pesto & stir to combine.
Step 5
Add the cooked sausage meat back to the pot with the tortellini & stock cube dissolved in 350 ml of water per serving. Stir & leave to simmer for 4-5 min, until the tortellini rise to the surface.
Step 6
Turn off the heat & stir in the grated comté cheese for extra creaminess (optional).
Step 7
Serve the tortellini soup in a bowl & top with freshly grated pepper*. Enjoy ! *Check out our tips for this recipe
