Step 1
If needed, defrost your salmon. In a large pot of boiling water, cook the pasta according to the instructions on the package.
Step 2
In a frying pan on medium heat, add a drizzle of olive oil and the salmon. Cook for 6 minutes, skin side down.
Step 3
While the salmon and pasta are cooking, make the pesto. In a blender or food processor, add the peas (defrosted), garlic, pine nuts, feta, salt, pepper and one tablespoon of olive oil per person.
Step 4
Mix quickly, leaving the texture slightly chunky.
Step 5
Flip the salmon over and cook for one additional minute. Remove from heat.
Step 6
Set aside one cup of the pasta cooking water and drain the pasta.
Step 7
Add a drizzle of olive oil to a pan. Add the pesto and the reserved cooking liquid and mix.
Step 8
Add the zest and juice of one lemon. Add the pasta to the pan and mix. Season with salt & pepper.
Step 9
Distribute the pasta onto plates.
Step 10
Top the pasta with the salmon, broken up into large pieces. Optional: Top with a few extra peas and crumbled feta. Enjoy!
