Stovetop, Frying pan, Pot (small)
Step 1
Wash & slice the potatoes into large chunks.
Step 2
In a pot of salted boiling water, add the potatoes. Cook for 10-12 min, over medium heat.
Step 3
Meanwhile, wash & slice the zucchini into half-moons.
Step 4
Slice the chicken in large cubes.
Step 5
Heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté for 30 sec, stirring continuously.
Step 6
Add the zucchini & chicken to the pan. Season with salt & pepper & cook for 6-8 min, stirring.
Step 7
Meanwhile, wash & finely mince the parsley.
Step 8
Once the potatoes are tender, drain them & add them to the pan with a small drizzle of olive oil. Sauté for another 5-6 min.
Step 9
In the meantime, prepare the yogurt sauce. In a small bowl, combine : the greek yogurt, minced parsley & a drizzle of olive oil. Season with salt & pepper.
Step 10
Serve the pan-fried chicken & veggies topped with the yogurt sauce. Re-season to taste & enjoy !
