Step 1
Peel & slice the onions into thin rounds.
Step 2
Melt a dab of butter in a pot, over medium heat. Add the onions & cook for 15-20 min, stirring regularly, until golden brown & jammy. Optional : for a thicker soup, add 1 teaspoon of flour per serving.
Step 3
Add 250ml of hot water per serving & the stock cube. Mix to dissolve the stock cube. Season to taste & add a splash of white wine (optional). Cover & leave to simmer for 30-35 min, over low heat.
Step 4
Towards the end of cooking the soup, place the bread on a sheet tray lined with parchment paper. Sprinkle over with the grated cheese & grill in the oven for 5-6 min, or until the cheese is melted & the bread crispy.
Step 5
Serve the onion soup in a bowl with the crispy cheesy toast. Re-season to taste & enjoy !
