Finely chop the onions.

Wash, peel and cut the sweet potatoes into small cubes.

In a large pot, add a splash of olive oil and cook the onions for 1 minute before adding the sweet potatoes.

Tomato sauce
Vegetable bouillon (cube)
Mild chile powder, ground (Espelette)

Step 4

Add the tomatoes, 1 cup of water per person, vegetable stock cube, (optional: chilli), mix.

Step 5

Reduce the heat, cover and leave to simmer for 20 minutes.

Meanwhile, cut the avocado in cubes.

Cilantro (fresh)
Lime
Tortilla chips

Step 7

Serve the soup with your favorite toppings: tortilla chips, avocado, feta, lime and cilantro.

Step 8

Enjoy! If you prefer things a bit spicier, add a bit of chilli or Tabasco if you have any.
