Our version of a traditional West African stew!
Make sure you have...
Pot (small), Stovetop
Step 1
In a pot of boiling salted water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm.
Step 2
Meanwhile, peel & finely dice the onions.
Step 3
Cut the chicken into bite-size pieces & set aside.
Step 4
Heat a drizzle of olive oil in a pot, over medium heat. Add the onions* & sauté for 3 min. *Check out our tips for this step
Step 5
Add the tomatoes into the pot. Stir & simmer for 5 min.
Step 6
Add 60ml of water per person, the cubed broth & peanut butter. Stir to combine.
Step 7
Add the chicken into the pot. Stir & leave to cook for 8-10 min, until cooked through.
Step 8
Serve the mafé with the rice, adjusting seasoning to taste. Enjoy !
For a truly flavoursome dish, we suggest adding ground ginger, garlic, lime juice & a bit of chili for those who like a bit of a kick in their dish !
