Stovetop, Peeler, Pot (small), Grater

Red onion

Step 1

Peel & slice the onions into thin strips.

Sweet potato

Step 2

Peel & grate the sweet potatoes.

Tomato paste
Turmeric (ground)

Step 3

Heat a drizzle of olive oil in a pot, over medium-high heat. Add the onions, tomato paste & ground turmeric. Sauté for 2 minutes, stirring.

Red lentils (dry)

Step 4

Add the lentils & grated sweet potatoes to the pot & stir.

Vegetable bouillon (cube)

Step 5

Add the veggie broth with 15cl of water per portion. Season with pepper & stir to evenly coat.

Coconut milk

Step 6

Add the coconut milk & stir. Cover & leave to simmer for 25 min, stirring from time to time.

Step 7

Serve the lentil & sweet potato curry in a bowl. Top with freshly grated pepper, a drizzle of coconut milk, red onion slices & fresh cilantro, if you have some. Enjoy !
