Step 1
Remove the skin from the onion and thinly slice it. Set aside.
Step 2
Wash and slice the mushrooms. Set aside.
Step 3
Wash the leeks and cut them into thin slices*. Set aside. *Check out our tips for this step
Step 4
Add a drizzle of olive oil to a pan on medium heat. Add the onion, leeks, and mushrooms. Cook for 3 minutes, stirring frequently.
Step 5
Add the wheat berries and cook for 1 minute. Add 1 1/4 cups of water per person, the bouillon cube and soy sauce.
Step 6
Cook on medium heat for 12 minutes.
Step 7
Pour into bowls. Add some fresh mushrooms and a drizzle of olive oil on top. Enjoy!
