You might know this as a tart, but have you ever tried it as a pie ?

Step 1
Preheat the oven to 220°C. Thaw the spinach according to package instructions. Drain thoroughly to remove any excess water.
Step 2
Meanwhile, peel & finely mince the garlic.
Step 3
Prepare the pie filling. In a mixing bowl, add : the goat's cheese, spinach, parmesan, eggs (set 1 yolk aside for the pastry), pesto & garlic. Season with salt & pepper. Whisk to combine. If you have some, add the pine nuts & stir to combine.
Step 4
Line a baking tray with parchment paper. Roll out one pastry sheet & spread the filling on top, leaving 1cm border all around.
Step 5
Cover with the second pastry sheet. Seal the pie by pinching the edges between your fingers. Press down with the tip of a fork.
Step 6
Brush the pie with the reserved egg yolk whisked in with 1 tablespoon of water.
Step 7
Prick the pie & bake for 30 min at 220°C, or until golden & crisp on top. Serve with a side of green salad & enjoy !
