You might know this as a tart, but have you ever tried it as a pie?

Step 1
Preheat the oven to 220°C. Defrost the spinach in a pot on a low heat.
Step 2
Peel and finely chop the garlic.
Step 3
In a bowl, mix: the goat's cheese, spinach, parmesan, pesto, garlic, eggs (save one yolk to color the top of the pie).
Step 4
Salt and pepper. Mix with a fork. Add the pine nuts (if you have any).
Step 5
Roll out one pastry sheet and put it, keeping its baking paper on, on an oven tray. Spread the cheese mixture on top, stopping 1cm from the edge
Step 6
Cover with the second pastry sheet. Pinch the edges between your fingers to close and press down with a fork.
Step 7
Paint the pie (using a brush or your fingers) with one beaten egg yolk mixed with a soup of water.
Step 8
Bake for 30 minutes until it's nice and golden. Serve!
