Let's get back to basics with this nice cut of meat cooked in a garlic butter with seasonal veg !
Make sure you have...
Oven, Stovetop, Frying pan
Step 1
Preheat the oven to 200°C. Clean the potatoes & slice into wedges.
Step 2
On a sheet tray lined with parchment paper, add the potatoes & a generous drizzle of olive oil. Season with salt & pepper. Toss to evenly coat. Roast for 30 min at 200°C.
Step 3
Meanwhile, wash & finely chop the parsley.
Step 4
Prepare the garlic butter. In a bowl, combine softened butter, grated garlic, chopped parsley, salt & pepper. Mix it all together.
Step 5
Wash & cut the zucchini into half-moons.
Step 6
Heat a bit of the garlic butter in a pan over medium heat. Add the zucchini, salt & pepper. Stir & cook for 6-8 min.
Step 7
Add a bit more garlic butter to the same pan over medium-high heat. Add the steak. Season with salt & pepper. Sear 2 min on each side for a medium-rare piece of meat.
Step 8
Transfer the steak to a cutting board & slice if desired.
Step 9
Remove the potatoes from the oven. Serve with zucchini & steak brushed with any leftover garlic butter. Enjoy!
