Make sure you have...
Stovetop, Pot (large)
Step 1
Wash & finely chop the parsley.
Step 2
Peel & thinly slice the onions.
Step 3
Heat a few dabs of butter in a pot over medium-high heat. Add the onions & stir until they become translucent, about 3-4 min. Cover the pot for 2 min, then remove the lid, stir well. Repeat the process 2-3 times until the onions are nicely caramelized (time will vary depending on servings of onions).
Step 4
Pour the white wine vinegar. Season with salt & pepper, then mix once more.
Step 5
Prepare the vegetable broth by dissolving the broth cube in 150 ml of hot water per person.
Step 6
Add the uncooked pasta & veggie broth. Stir to combine. Bring everything up to a boil, then reduce to a simmer. Cover the pot & cook 8-10 min.
Step 7
Turn off the heat, then stir in most of the parmesan cheese & chopped parsley until well combined.
Step 8
Serve in a bowl garnished with more chopped parsley & parmesan if desired. Enjoy !
